Ingredients: Dosa Batter, Veggies of your choice, Mozzarella cheese, pizza spread Chop the vegetables and keep them ready. Grate the mozzarella cheese and set aside. Heat a non-stick or cast-iron dosa tawa on medium heat. Ensure the pan is well-heated before pouring the batter to get a crispy dosa base. Take a ladleful of dosa batter and pour it in the center of the tawa. Spread the batter evenly in a circular motion. The dosa should be slightly thicker than a regular dosa to hold the toppings. Drizzle a little olive oil or ghee around the edges. Once the dosa starts cooking, spread 1-2 tablespoons of pizza sauce evenly on top of the dosa using the back of a spoon. Sprinkle grated mozzarella cheese generously over the pizza sauce. Add chopped onions, bell peppers, sweet corn, tomatoes, olives, and mushrooms (or any other desired toppings). Sprinkle a pinch of mixed Italian herbs, red chili flakes, and salt on top of the vegetables. Cover the dosa with a lid and cook on low heat for 2-3 minutes or until the cheese melts and the base turns golden brown and crispy. Keep an eye on the dosa to prevent it from burning. Once the cheese is melted and the edges of the dosa are crispy, remove the lid. Use a spatula to gently lift the dosa from the tawa and transfer it to a serving plate. Garnish with fresh basil leaves and extra cheese, if desired. Cut the pizza dosa into wedges like a pizza using a pizza cutter or knife. Serve hot with extra pizza sauce or your favorite dip.
